Delicious & healthy date-nut bread

Hi!! I hope you´re having a wonderful week! Before starting this post I want to thank all your comments, they really give me the fortitute to continue, I really appreciate it a lot and every one of your comments are one more reason to keep going!! Thank you so much!!
To thank you all, today I want to share a sweet, healthy and absolutely delicious recipe, I encourage you to try it  and not be led by the photos, it just does not seem as appetizing as it really is!!

Qué tal lleváis la semana? Espero que  muy bien! Antes de comenzar este post quiero agradeceros todas las muestras de ánimo que me habéis hecho llegar, realmente lo aprecio muchísimo y todos y cada uno de vuestros comentarios son un motivo más para seguir adelante!!  Mil gracias!!
Para agradecer tanta dulzura, quiero compartir hoy una receta dulce, saludable y absolutamente deliciosa, os animo a que la probéis y no os dejéis llevar por la fotos, que igual no parece tan apetecible como en verdad es!

Esta receta pertenece a "El gran libro de los cereales, semillas y legumbres" de Molly Brown y es uno de mis recetarios favoritos, todas las recetas incluyen, como su nombre lo dice, cereales, semillas y legumbres de todos los tipos, desde garbanzos o arroz hasta bulgur, cuscus o quinoa...  hay de todo, y de todos los tipos: dulces, entrantes, platos principales, lo que os podáis imaginar. Me gusta mucho la sencillez de los platos, casi todos son muy fáciles de preparar, muy saludables y nutritivos, y me encanta su fotografía limpia y sencilla, donde la estrella es el plato y no los accesorios (como está tan de moda en algunos blogs de cocina).
Os animo a haceros con este libro, si tenéis la oportunidad, se encuentra en cualquier librería y su precio ronda los 20 euros.
En casa comemos mucho pan casero, y los panes que contienen semillas y frutos secos son nuestros favoritos, así que cuando vi esta receta supe que nos encantaría, y así fue. Es una mezcla de pan y pastel, dulce pero que no empalaga en absoluto, y esa mezcla de frutos y azúcar moreno le da un sabor único. Es ideal para la hora del café!!
Os cuento la receta original y a continuación algunas modificaciones que yo he hecho.


Pan de dátiles y frutos secos
Ingredientes:
175 gr dátiles
50 gr orejones deshidratados
175 gr mantequilla
175 gr azúcar moreno
1 huevo ligeramente batido
100 gr harina de trigo
125 gr harina integral
1 cta polvo de hornear
1 pizca de nuez moscada
1 pizca de canela
50 gr de nueces troceadas
1 y 1/2 cda semillas de chía y 1/2 cda para espolvorear
ralladura de naranja
Preparación:
En una cacerola pequeña pondremos los dátiles y orejones en 125 ml de agua, una vez rompa el hervor, bajamos el fuego y dejamos cocer durante 15 minutos. Retiramos del fuego y dejamos templar.
Calentamos el horno a 180º. Forramos un molde con papel de horno.
Derretimos la mantequilla unos segundos al microondas, dejamos templar, y echamos en la cacerola sobre los dátiles con su agua. Añadimos el azúcar, la ralladura de naranja y el huevo batido. Mezclamos hasta integrar.
En un cuenco amplio tamizamos las harina junto con el polvo de hornear, la canela y la nuez moscada. Agregamos las semillas de chia y las nueces. Hacemos un hoyo en el centro y vertemos la mezcla de dátiles. Mezclamos todo cuidadosamente. Colocamos en el molde. espolvoreamos con las semillas de chia y llevamos al horno durante 1 hora y 15 minutos aproximadamente.
Mis variaciones:
Como no me gustan los orejones, los sustituí por una mezcla de frutos del bosque, fresas y arándanos deshidratados, que herví junto con los dátiles. Agregué bastante más cantidad de frutos que en la receta original.
Como no me quedaban semillas de chia en casa, las sustituí por semillas de amapola, lino y sésamo, tanto dentro de la masa como para espolvorear.
Como la primera vez que probé esta receta hice estas variaciones y nos encantó, siempre la realizo de esta manera y nunca de la forma original. Os animo a dejar volar vuestra imaginación!
Como veis es una receta sencilla y saludable, si no os gustan los frutos del bosque podéis utilizar sólo frutos secos, como nueces, almendras, anacardos, cacahuetes. Personalmente me gusta mucho incluir semillas, como sésamo, amapola, girasol, lino, calabaza... creo que esta receta es muy versátil y admite muchas variaciones. Ya me contareis si la probáis y que combinaciones se os ocurren!!

This recipe belongs to the book `The definitive guide to cooking grains, seeds and legumes´ by Molly Brown and it is one of my favorite recipe books, all recipes include, as its name implies, grains, seeds and legumes of all types, from peas or rice to bulgur , couscous or quinoa... there is everything, and all types: sweet, starters, main dishes, all you can imagine. I really like the simplicity of the dishes, almost all are very easy to prepare, very healthy and nutritious, and I love its clean and simple photography, where the star is the plate and not accessories (as is so fashionable in some cooking blogs).
I encourage you to read this book, if you have the opportunity, you can find it  in any bookstore and it sells for around 16 £.
At home we love homemade bread and all kind of breads containing seeds and nuts are our favorites, so when I saw this recipe I knew that we would love it, and actually we did! It is a mixture of bread and cake, sweet but not oversweet at all, and the mixture of fruit and brown sugar gives it a unique flavor. It is ideal for coffee time!!
Here it is the original recipe and then some changes I"ve made.

Date-nut bread
Ingredients:
175 gr dates
50g dried apricots
175 gr butter
175 gr brown sugar
1 egg, lightly beaten
100 g wheat flour
125 g  whole wheat flour
1 teaspoon baking powder
1 pinch of nutmeg
1 pinch of cinnamon
50g chopped walnuts
1 1/2 tbsp chia seeds and 1/2 tbsp to sprinkle
orange zest
Preparation:
In a small saucepan place dates and dried apricots in 125 ml of water, once it boils, lower the heat and cook for 15 minutes. Remove from heat and let temper.
Heat the oven to 180 degrees. Cover a mould with baking paper.
Melt the butter in the microwave for a few seconds, let temper, and add to the dates in the saucepan. Add brown sugar, orange zest and beaten egg. Mix until blended.
In a large bowl sift the flours with the baking powder, cinnamon and nutmeg. Add chia seeds and nuts. Make a hole in the center and pour the mixture of dates. Mix everything carefully. Place in the mould, sprinkle with chia seeds and take to the oven for approximately 1 hour and 15 minutes.
My variations:
As I don´t like dried apricots, I substituted by a mixture of fruits of the forest, dried strawberries and blueberries, which I boiled with dates. I added a quite a lot more fruits than in the original recipe.
As I didn´t have chia seeds at home, I replaced them with poppy seeds, flax and sesame, both in the batter and to sprinkle.
Like the first time I tried this recipe I did these variations and loved it, I always make it in the same way and never as in the original recipe. I encourage you to let your imagination fly!

As you can see it´s a simple, healthy recipe, if you don´t like berries, you can use walnuts, almonds, cashews, peanuts. I personally like seeds, like sesame, poppy, sunflower, flax, pumpkin seeds, so I always  add a handfull whenever the recipe allows me... I think this recipe is very versatile and supports many variations.  Please tell me if you give it a go, and which combinations come to your mind!!
